MAC DUY THANG (Vietnam)

Impressed by the politeness of the Japanese people, he came to Japan to study the hospitality industry. He currently works as a manager at DD Group's Kudanshita Torifuku, where he is entrusted with an important role in running the store.

A food service company operating in a wide range of business formats, from izakayas to cafes and restaurants. It operates 115 brands, including "Warayaki-ya" and "chano-ma," with approximately 320 stores in Japan and overseas. Its commitment to high-quality ingredients and attentive service has earned it the support of a wide range of customers. With a global perspective, the company has built a work environment that makes the most of diversity, with a multinational staff including specific skilled workers.



This time, we visited Kudanshita Torifuku, run by the DD Group, and spoke with Mac, a Vietnamese worker with specific skills!

──Why did you want to work in Japan?


I wanted to learn about Japanese customer service, so I hoped to find work in a restaurant. I originally came to Japan as an international student, and after graduating from high school, I came to study Japanese. What sparked my interest in Japan was the impression I received from the politeness of the Japanese people . I wanted to grow while working in an environment where I could learn this courtesy and customer service culture, so I chose to work for a Japanese company .

──There are many companies in the food and beverage industry, but why did you choose the DD Group?


I was attracted to the DD Group because of its large scale and the fact that it operates restaurants of various genres and concepts. I thought that an environment where I could gain a wide range of knowledge and experience would lead to my own growth . In fact, there are three Torifuku stores alone, and by helping out at other stores, I have the opportunity to learn different management methods and services. Another reason I wanted to work there was that my older brother, who lives with me, is a DD employee and I had heard about the appeal of the company.

──Please tell us about your current job.


I am mainly in charge of cooking in the kitchen and training part-time employees . Specifically, I am not only responsible for preparing the menu, but also for the responsible tasks of ordering and inventory management. Ordering and inventory management are difficult, but if you study, it is not impossible. That is why I am working hard to study hard so that I can tackle the job with confidence.



When teaching part-time employees, the language barrier can be an issue. There are times when I can't communicate in my native language, Japanese, or English, so I try to use body language to get the message across. However, by repeatedly communicating, I've found that they are now able to do more and more, and I feel that my teaching is working.

──Please tell us what is rewarding about your job.


Grilling yakitori is my favorite part of the job. Grilling over charcoal requires careful attention to the aroma and doneness, which requires skill, so I find it very rewarding.


I enjoy being able to personally deliver the grilled yakitori to the customers' tables and see their reactions . I feel especially happy when they ask for seconds, knowing that they are enjoying my food. I find joy in providing delicious food and delivering it to them in the freshest, most delicious state.

──Please tell us your future goals!


My immediate goal is to increase sales at the Torifuku store where I currently work. To achieve this, I want to work from a management perspective to not just increase sales, but also to ensure profits are made .

I also believe that hygiene management is extremely important. By setting a standard and always showing an example, I hope that part-time staff will naturally follow suit and that this will lead to improved quality throughout the store.

After the interview, we were shown how to actually grill yakitori! As he said it was his favorite job, his dexterity and serious gaze were impressive★ And, to my surprise, we even got to try some of the finished yakitori...! The aroma of the charcoal grilling was outstanding! It was sooooooo delicious!! Thank you for the meal! (^人^) I'm looking forward to seeing Mac in action at our next regular interview♩
